Ingredients

  • 2 # LEAN GROUND BEEF
  • 1# GROUND PORK
  • .5# VEAL (SUB BEEF IF NOT AVAILABLE
  • 1TBS SALT
  • 1TBS GROUND BLACK PEPPER
  • 1tsp PAPRIKA
  • 1tsp RED PEPPER FLAKES
  • 4 CUPS OF STALE ITALIAN BREAD BROKEN TO 1/2GOLF BALL SIZE BITS
  • 1 LARGE YELLO ONION CHOPPED
  • 2 -3 CLOVES OF MINCED GARLIC
  • 2 CUPS OF CHOPPED PARSLEY
  • 1.5 CUPS OF GRATED PARMESIANO
  • 3 EGGS
  • 2 CUPS OF MILK
  • 2 CUPS OF ITALIAN BREAD CRUMBS

Steps

  1. IN A LARGE MIXING BOWL COMBINE MEAT, GARLIC, ONIONS, SALT, PEPPER, PAPRIKA, RED PEP, PARSLEY, PARM, AND 3 LOOSE EGGS
  2. IN SEPRATE BOWL HYDRATE STALE BREAD WITH MILK. SQUEEZING BREAD TO SIMPLE DAMPNESS BREAK INTO YET SMALLER PIECES AND ADD TO BOWL. WITH GLOVED HAND MIX WELL.
  3. USE A 3 0Z ICE CREAM SCOOP TO KEEP BALLS A CONSISTENT SIZE. ROLL AND COMPRESS FURTHER WITH GLOVED HANDS.
  4. NEXT ROLL YOUR BALLS IN BREAD CRUMBS. BROWN 10 -12 BALLS GENTLY IN EVOO AND ADD TO THE SAUCE.
  5. THE REMAINING BALLS CAN BE BAKED IN OVEN @350 DEGREES FOR A HALF HOUR.
