Meat Sauce

Feeds 10-12

Ingredients

  • 4 large cans 28 oz or (1# 12 oz ) of good tomato puree NOT SAUCE
  • 2 small cans 6oz of tomato paste your choice depending how thick prefer
  • 2 links of hot salcice cut into 1/4s
  • 3 links of sweet salcice cut into 1/2s
  • 10-12 meat balls (recipe separate
  • 1 large yellow onion minced
  • 5 cloves of garlic minced
  • 2 bay leaves
  • 1 meaty beef short rib
  • 3 pork spare ribs about 1# of pork neck bones
  • olive oil
  • salt and pepper
  • H2O

Steps

  1. In a large stock pot brown (not full cook) salcice. beef short rib, spare ribs, and pork neck bones
  2. remove the rendered fat leaving enough to sautee onions and garlic. onions go in first then salt them. When onion turn clear add garlic cook until garlic is just light brown.
  3. Add tomato puree and bay leaves salt and pepper to taste.
  4. Add browned meatballs
  5. bring to simmer
  6. add tomato paste
  7. usually for each can of paste you will add the same amount of water sauce will thicken as it continues to simmer
  8. taste for salinity and adjust H2O if needed.
  9. simmer with lid on--It tastes best to cook on the lowest setting for > 4 hours. stir from bottom to prevent burning.
