Montreal Style Bagels, via Russ
INGREDIENTS
1 1/2 cup water
5 tablespoons sugar
3 tablespoons oil
1 package yeast
1 tablespoon beaten egg
4 1/2 cups bread flour
1 teaspoon salt
INSTRUCTIONS
1. Dissolve yeast in water, then add sugar, oil and egg
2. Fold in flour for a soft dough; knead 10-12 minutes
3. Let dough rest for 10 minutes
4. Divide dough into 12 portions
5. Roll into ropes, then join to make rings
6. Let rise for 30 minutes
7. Boil lots of water, add 1 tablespoon honey
8. Boil bagels 1 minute, flip once
9. Drain bagel
10. Sprinkle with sesame seeds
11. Bake at 400 until golden
