My parents' rhubarb muffins

1 1/4 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/4 cup white sugar
1/4 cup brown sugar
1 egg
1/2 cup milk
1/4 cup oil
1 tsp almond flavouring (optional)
1 1/2 cups diced rhubarb

Mix dry ingredients. Beat egg, add milk, oil, and almond flavouring. Pour egg mixture over dry and stir to moisten. Fold in rhubarb.

Bake 20 min at 375. While hot dip tops in sugar, or sprinkle before baking.
