johnny cakes aka journey cakes aka hoecakes aka fried cornbread I guess

2 cups water
1/2 teaspoon salt
2 cups coarsely ground cornmeal
1 tbsp olive oil
1 tsp sugar
1/3 cup white flour

Mix together dry ingredients. Boil water. Pour boiling water and oil into dry ingredients and mix thoroughly. Let sit a little while to let the cornmeal mildly absorb water, then mix in the flour. Should be kinda gloppy.

Fry in a cast-iron skillet with more olive oil, on a fairly low temp to make sure it cooks through, but make sure to brown the outsides.

Good plain with jam, or eaten with chilli. Probably also good with cheese and pickles, just guessing.
