flourless peanut butter cookies

1 cup natural peanut butter
1 cup sugar
vanilla
salt
1 egg

Mix the first four ingredients together, then mix in the egg. Bake at 350 for about 10 minutes.

(you'll think that it's hopeless bc of the runniness of the peanut butter, but eggs do magical emulsifying things when mixed in and it totally alters the texture to the correct cookie-dough texture.

Makes about 20ish cookies when scooped using a tea-measuring scoop.
