paneer curry

I added some diced chicken breast to this. I fry it seperately in a small pan and add after cheese is browned.

250ml tomato passata
250ml double cream
2 teaspoons finely grated ginger
1/4 teaspoon whole cumin seeds
2-3 tablespoons chopped whole coriander
1 teaspoon garam masala
2 teaspoons lemon juice
1/2 teaspoon sugar
1 fresh hot green chilli, finely chopped
1 1/4 teaspoons salt
1/4 teaspoon good red chilli powder
1 teaspoon ground roast cumin seeds
1 tablespoon of dried fenugreek leaves
400g of fresh indian paneer cheese cut into 2cm squares
freshly ground black pepper
2 tablespoons unsalted butter
peanut oil

1. combine passata, cream, ginger, garam masala, lemon juice, sugar, green chilli, 1 teaspoon of salt, chilli powder, ground roasted cumin and fenugreek leaves in a bowl. stir and set aside.

2. put the cheese in a bowl with a 1/2 teaspoon of salt and some black pepper, toss

3. put the butter, oil and cumin seeds in a non stick pan. set on medium heat. added cheese and brown on at least 2 sides

4. add sauce, simmer, garnish with coriander
