Banana sourdough brioche - experiment (success!)

No-knead cast iron pan method.

2 cup white
1.5 cup wholemeal
4 tsp gluten flour
2 tsp salt
2 eggs
2 frozen bananas, thawed and squeezed out
1/4 cup neutral oil
1/4 cup or less honey
1 cup starter
dash of filtered water if required

Whisk dry ingredients in large bowl. Add bananas and eggs to measuring jug, whisk to mash/combine. Add oil and honey to bring liquid measure to 1.75 cups. Add liquids in jug, and starter, to flour and mix, adding water if required.

Bake at 200C, 50 min lid on and 10 min lid off.

Result: delicious! Half way between cake and bread.

Later thoughts: did not age well, would have like more banana. Do I need the eggs? Crustiness is not that nice on brioche either.
