Lemon Scones

1 cup flour
1 tbsp + 1 tsp sugar
1 tbsp baking powder
1 pinch salt
4 tbsp butter
1/4 cup milk
1/2 egg
zest of one lemon
a little lemon juice (last squeeze from curd?)
??? coriander
??? cardamom
??? cinnamon

zest lemon
stir together dry ingredients
combine milk with egg and lemon juice and let sit for ~10 minutes to get buttermilk-like
chunk and cut butter into dry ingredients while cold
add zest and liquid to dry ingredients
mix by hand until "shaggy"
knead/flatten by hand then fold into layers and repeat a couple times
flatten by hand and cut into circles or triangles, or press into greased drop biscuit pan
bake on a greased baking sheet or biscuit pan about 10-12 minutes at 425 deg F

makes 4 beer-glass sized scones

NOTES from 3/11/19 trial: add more sugar (2 tbsp?), possibly use less salt (1/2 tsp?).
