Chip shop batter recipe

  • 150g* plain flour
  • 2-3* tsp baking powder**
  • 1/2* tsp salt

Tried adding a splash of soy sauce and vinegar to add a bit of colour and flavour, and crispiness, respectively. Works a treat!

Whisk together, make a well, then add enough cold water** and whisk air into it as if making an omelette, to make thin, sticky batter.

Great with tilapia or any white fish. Makes enough for at least two fillets.

*I didn't measure out any ingredients, just used what looked about right.

**You can use lager instead of the water and baking powder, but personally I think it's better to drink the beer with the battered fish.
