So why have popular media outlets been reporting that this technique may reduce calories of rice by “up to 50 percent?” Because in his presentation, James projected that it might be possible to do so in other varieties of rice – which have not actually been tested yet. In other words, there are as yet no data to support that the coconut oil/12-hour cooling method has successfully produced a calorie reduction anywhere close to 50 percent. If such a finding were eventually to be borne out by the scientific data, however, you’d still need to get your hands of the specific variety of Sri Lankan rice in which this dramatic effect had been demonstrated. (And I suggest James would do well to take a leave of absence from school to invest in a rice plantation, as global demand for that cultivar will be through the roof!)
