Dahl recipe
Ingredients:
- 1 large finely chopped onion
- 3 crushed garlic cloves
- 2-3 tbsp of crated ginger
- 1 bay leaf
- 1 tbsp olive oil
- 1 cup split red lentils or whole red lentils.
- 4 tsp Indian curry powder
- 2 tsp turmeric
- 3 cups veggie stock
- 1 cup sweet potatoes
- 1/2 red capsicum
- 1 can coconut milk
- Chopped baby spinach (optional)
Directions:
- Fry onion, garlic, ginger and bay leaf in olive oil until onion is soft.
- Add lentils, curry powder, and tumeric. Fry for 2 min, stirring constantly.
- Pour in stock and add the sweet potatoes, capsicum and coconut milk.
- Simmer on low heat for 1 hour, stirring occasionally to prevent sticking.
- Add chopped spinach at the end of cooking and stir for 2 min before serving.
