Dahl recipe

Ingredients:

  • 1 large finely chopped onion
  • 3 crushed garlic cloves
  • 2-3 tbsp of crated ginger
  • 1 bay leaf
  • 1 tbsp olive oil
  • 1 cup split red lentils or whole red lentils.
  • 4 tsp Indian curry powder
  • 2 tsp turmeric
  • 3 cups veggie stock
  • 1 cup sweet potatoes
  • 1/2 red capsicum
  • 1 can coconut milk
  • Chopped baby spinach (optional)

Directions:

  1. Fry onion, garlic, ginger and bay leaf in olive oil until onion is soft.
  2. Add lentils, curry powder, and tumeric. Fry for 2 min, stirring constantly.
  3. Pour in stock and add the sweet potatoes, capsicum and coconut milk.
  4. Simmer on low heat for 1 hour, stirring occasionally to prevent sticking.
  5. Add chopped spinach at the end of cooking and stir for 2 min before serving.
