vodka cream sauce

butter + oil
onion + garlic (shallots?)
tomatoes (whole, crushed, or puree, 1-2 cans)
vodka (1/2-1 cup)
salt, pepper, red pepper?
basil?
1tsp sugar?
cream (1/2-1 cup)
cheese (2 tbsp-1 cup)

sweat alliums in butter/oil, crush tomatoes into it and let the flavors combine a while, add vodka and let it boil off (5-10 min), possibly blend, add cream and cheese on low heat, spices, thin out with pasta water if necessary

first attempt: 2 tbsp oil (the backup bottle, I was out of the good kind), 2 tbsp margarine, don't have any onion, 3 cloves garlic, 1 can diced tomatoes, 1/3 cup vodka (ran out), 2/3 cup milk plus a dollop of sour cream (didn't have cream), parmaggiano (is this just Italian for parmesan? investigate). blended a bit with the immersion blender, leaving some chunks. minced the garlic bc my press is still in the car from beach werewolves and I didn't wanna go get it. edible but not the goal, gonna need to try again
