# Barbecue sauces


## Kansas City style, for ribs

Makes 1 cup, enough for a rack

1/3 C ketchup
3 T cider vinegar
3 T honey
1 T worcestershire
1 T fish sauce
1 T dijon (but see if you need this, maybe take it out)
1 t hot smoked paprika
1/2 t garlic powder
1/2 t ground cumin
1/4 t cayenne
1/4 t black pepper
1/4 t salt


## South Carolina style, for pulled pork, chops, dogs, etc.

Makes 3 cups

2 cups prepared yellow mustard
2/3 cup cider vinegar
3 tablespoons tomato paste
1/2 teaspoon hot sauce
3/4 cup sugar
2 teaspoons dried rosemary leaves
1 teaspoon celery seed
3 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper


## East Carolina style, for pulled pork, vinegar only

Makes 1.5 cups

1 1/2 cups of distilled vinegar
1 teaspoon hot sauce
2 tablespoons sugar (white, light brown, or dark brown)
1 tablespoon salt
2 teaspoons crushed red pepper
2 teaspoons finely ground black pepper


## Lexington style, for pulled pork, with ketchup

Makes 1.5 cups

1 cup distilled vinegar
1/4 cup ketchup
1/4 cup apple juice
1 teaspoon hot sauce
3 tablespoons light brown sugar
1/2 tablespoon salt
1 teaspoon crushed red pepper
1 teaspoon finely ground black pepper
