Black Bean Burgers

6 oz mushrooms, quartered 1/2 red onion, quartered 1/2 cup packed cilantro leaves 6 T whole wheat bread crumbs 2 garlic cloves 1 jalapeño, chopped (I did not seed mine) 1 egg white 2 tsp soy sauce 1 can (15 oz) black beans, drained and rinsed 1 T canola oil 4 slices pepper jack cheese 4 whole wheat sandwich rolls, toasted lettuce leaves tomato slices mustard

In the bowl of a food processor, combine the mushrooms, onion, cilantro, bread crumbs, garlic, jalapeño, egg white and soy sauce. Process until finely chopped. You'll probably have to stop and push the mixture down into the processor at least once. Add the beans and pulse until coarsely chopped, maybe 10 to 15 pulses. Divide mixture into fourths and form patties. I refrigerated mine for about 20 to 30 minutes hoping they would firm up more.

Using a large non stick skillet, heat the oil over medium to medium high heat. Brown the patties for 3 minutes per side. Top each pattie with a slice of cheese and let it melt, with the heat off for a minute or so.

Toast the buns and smear with some mustard, add the black bean burger, top with lettuce and tomato and enjoy! (or at least pretend)
