Recipe: Jungle Curry Pork
Ingredients:
10 oz pork tenderloin (or chicken) cut into bite size pieces
2 Tbsp veg oil
1 tsp garlic, minced
3 Tbsp red curry paste
2 lime leaves
1 cup warm water
2 Tbsp fish sauce
1 tsp sugar
1 Tbsp oyster sauce
1 cup bamboo shoots
a bunch of chopped up green beans
chopped up asian eggplant or other veg
half a chopped up red pepper
20 fresh thai basil leaves
Directions (abridged): stir fry the above, serve with rice or quinoa.
Order of things to add to the wok: oil, garlic, curry paste, pork/chicken, lime leaves, water, fish sauce, sugar, oyster sauce, bamboo shoots and other veg, basil. Cooking time should only be about 10 mins.
