Nutty Mushroom Roast

Ingredients:

4oz mushrooms, chopped 2oz mixed nuts, chopped 2oz butter or margarine 1 medium onion Salt and pepper 4oz cheese, grated 3oz wholemeal breadcrumbs 1 egg, beaten 1 tsp yeast extract

Method:

  1. Melt the butter over a low heat, add the mushrooms, onions and nuts and cook for 15 minutes.

  2. Add grated cheese, breadcrumbs, yeast extract and seasoning.

  3. Finally add the beaten egg.

  4. Mix thoroughly and place in a greased baking dish and bake in the oven at 190ºc / 375ºf / gas mark 5 for ½ hour until nice and brown.
